85 degrees out and Jon brought lamb stew. Punk as f-ck. His son Jimmy tagged along, and dished up his own concoction as well. The Langford apple? It does not fall far from the tree.
Ingredients
2 pounds of lean lamb
1 pound bacon
4 cups water
4 cups hard cider
1 teasp salt & 1 teasp pepper
1 large onion
3 parsnips
3 carrots
5 small potatoes
3 leeks
1 swede or white turnip
half a bunch of crinkly fresh parsley
Preparation
Cook bacon, drain fat–add lamb and liquid plus salt & pepper. Bring to the boil and simmer for one hour. Add all the vegetables (chopped roughly) except the potatoes, one leek, and half the parsley. Bring to the boil and simmer for another hour. Add potatoes and simmer for 20minutes–add remaining chopped leek and parsley and simmer for 5 minutes. Add salt to taste.
