Beef, Leek, and Barley soup

Soup chef Diana Gurley sent along a link to this recipe, from the cute-as-pie  Smitten Kitchen, which she used as the foundation/inspiration for her own beef and barley mash-up. The stuff delivered to the bar was quite thick; she left instructions to thin it with some water, which we did to a certain degree. The result was rich and filling  — though I did add another dash or two of salt to suit my hopelessly salt-o-philic palate.
