Lasagna Soup

Hearty, spicy, meaty, and aggressively un-Lenten, this was basically lasagna in a bowl, and a big hit with the under-ten set.

Ingredients
1 pound ground beef (or Italian sausage)
1 clove minced garlic
15 ounces spaghetti sauce
4 cups water
1 bay leaf
3 large lasagna noodles, broken
1/2 cup mozzarella cheese, shredded
1 small onion, chopped
28 ounces canned chopped tomatoes
3 chicken bullion cubes
1 beef bullion cube
1 tsp basil
1 tsp oregano
red pepper flakes to taste
2 cups ricotta cheese

Preparation
Cook beef, and then brown the onion and garlic with the beef for 3 mins. Add the tomatoes, sauce, bullion, water and seasonings and then bring to a boil. Then simmer for about 25 minutes, add the noodles and simmer for 15 minutes more. Serve with a dollop of ricotta/mozzarella and fresh basil.
