[Says Liz: “Unintentionally vegan and extremely frugal (I understand it’s a depression-era recipe), it’s still my favorite chocolate cake!”]
1-1/2 c. flour
1 c. sugar
1/3 c. cocoa
1 tsp. baking soda
1/2 tsp. salt
Whisk/sift dry ingredients. Add:
1 c. water
1/3 c. neutral-flavored vegetable oil
1 tsp. vanilla
1 Tbsp. white vinegar 
Makes one layer (double recipe for two-layer cake).  Bake at 350 for around 1/2 hour in greased pans.
The cake is very moist and chocolate but not too sweet, so it can handle both minimal flourish and a sweet icing.  My mom always made it with the NYTimes Cookbook fudge icing when I was a kid; last night I made a frosting with (I’m guessing):
1/3 c. Neufchatel cheese, softened
1/3 c. unsalted butter, softened
1 tsp. vanilla
3/4 of a 1 lb. bag of confectioner’s sugar
soy milk, as necc (maybe 1/3 c.?)
Blend cheese, butter, and vanilla with mixer until fluffy. Add sugar, and milk as necessary. Beat beat beat. Frost frost frost.
